For several thousand years a benevolent Queen has ruled generously beneath the sea, providing sustenance, tools, wealth and decoration for her subjects. From Key West, Fla., to Cuba, Brazil, Bermuda and the Caribbean the Queen conch (pronounced konk) continues to play a leading role in the heritage and diet of local inhabitants as well as tourists tentatively tasting sweet chewy white meat for the first time.

The Queen, which can also be a he, is actually a mollusk with a large slimy snail body. She has a hard horn shaped foot, called an operculum that is used to dig into the sand. Under crystalline turquoise waters she slowly propels her shell home across the sand to the grass beds where she feeds.

Scorched, salad, fritters, cracked, burgers, stew, and chowder are some of the more common ways that the large snail is prepared. It can be substituted for other seafood in dishes like linguine, curry, chili or stir-fry. Conch must be “bruised” before cooking.
